Gluten Free Scottish Style Shortbreads

Welcome back to another foodie related blog post. My weekend was filled with homely vibes, continuous relaxation and some family time. It's been a while since I have a full weekend at home without anything too busy planned or without being at work at some point and obviously on Sundays, we bake. My Mam came to ours with my Dad and little brother and as my Mam has been celiac since forever, everything baking related growing up was gluten free. I think this is why I never took a fancy to baking until recently as I would always remember my Mam telling me how difficult baking with gluten free flour or other alternatives was. These days, as a new diet fad, GF alternatives have become a new 'thing' and there has been some revelations in the baking world with regards to new formulas for GF flours so baking such goods has become easier. 

For this recipe I used a recipe found off Pinterest for 'regular' Scottish Shortbreads and created my own twist (would it be a blog post by me if I didn't change the recipe just a wee bit?) I made sure all my regular ingredients such as baking powder and icing sugar were 100% GF as well as using GF flour as an alternative to regular flour.

1 cup of soft butter (I use Stork)
2 cups of GF plain flour (I used Sainsbury's own brand)
1/2 cup of icing sugar
1/4 cup of golden caster sugar
1/4 tsp baking powder
1/2 tsp salt
Pinch of caster sugar

1. Pre-heat oven to 180C (Fan Oven) and line 2 baking trays with baking paper
2. Mix the soft butter, icing sugar and golden caster sugar in a large bowl until light and fluffy
3. Add the flour, baking powder and salt, mix well
4. Bring ingredients together in a ball shape using your hands, place on area to roll out biscuit dough
5. Roll dough out roughly to the thickness you desire the biscuits to be
6. Place rolled dough in fridge for 20-30 mins (or freezer for 10 mins)
7. Remove from fridge and begin to cut into desired shape using cookie cutter or a knife
8. Lay on baking trays with space between each biscuit and place in oven for 20-30 minutes
9. Remove from oven when baked fully (20-30 mins or until slightly browning) 
10. Place on cooling racks until cool enough to eat and dust with pinch of caster sugar and enjoy!
